The Story of Leslie Noble and Her Passion for Perfect Pies

In the heart of the Hudson Valley, where rolling farmlands meet small-town charm, there’s a bakery that has become a local institution: Noble Pies. Founded by Leslie Noble and her husband Tom Herman, this family-run business has grown from a single roadside stand into a thriving enterprise with five retail locations, a strong presence at farmers’ markets, and a dedicated wholesale business.

Leslie’s son Zachary Bonder and his partner Anjie Almonte are also heavily involved in the operation.

But behind the buttery, flaky crusts and rich, flavorful fillings is a story of resilience, dedication, and an unwavering commitment to quality.

How It All Began: From Farm Stand to Pie Empire

Like many great American success stories, Noble Pies was born out of necessity.

In 2008, during the Great Recession, Leslie found herself looking for a way to support her family and keep her home. Drawing on her love for baking, and her grandmother’s treasured recipes, she started making pies in her home kitchen and selling them from a simple picnic table outside her farm.

The response was overwhelming. People weren’t just buying pies; they were coming back for more, bringing friends, and spreading the word. What started as a small roadside stand soon blossomed into a full-fledged business, with customers traveling from miles around just to get a slice of something special.

What Makes Noble Pies Different?

There’s no shortage of bakeries, but Noble Pies stands apart because of its uncompromising approach to quality.

  • Handcrafted with Care – Every pie is made from scratch daily, using techniques passed down through generations.

  • An All-Butter Crust – The secret to that perfect texture? High-quality, grass-fed butter from the Catskills.

  • Locally Sourced Ingredients – Whenever possible, Noble Pies partners with Hudson Valley farms to ensure the freshest produce.

  • Timeless Recipes – Some of the pies on the menu have been made the same way for over 100 years.

  • A Welcoming Atmosphere – Each store is thoughtfully decorated, creating a warm, inviting space where customers feel at home.

  • Exceptional Service – The team at Noble Pies isn’t just knowledgeable. They genuinely care about delivering the best experience possible.

Leslie and her team believe that great pie isn’t just about great ingredients; it’s about the love and craftsmanship that go into every step of the process.

The Menu: A Perfect Balance of Sweet and Savory

Noble Pies has built its reputation on a diverse menu that goes far beyond traditional fruit pies. Whether you’re in the mood for something sweet, savory, or even unexpected, there’s a perfect option waiting for you.

Sweet Pies: Classic Comforts and Innovative Twists

  • Hudson Valley Apple Pie – A regional favorite, made with locally sourced apples.

  • Very Blueberry Pie – Packed with juicy blueberries, available with a crumb or pastry topping.

  • Will You Marry Me Cherry Pie – A pie so good, it has actually inspired marriage proposals.

  • Black Dirt Chocolate Pie – Named after the fertile Black Dirt Region of Warwick, this pie is a chocolate lover’s dream.

  • Leslie’s Lime Pie – A refreshingly tart option made with Turkish limes.

  • Coconut Cream Pie – Smooth, creamy, and topped with toasted coconut flakes.

Savory Pies: A Full Meal Wrapped in Flaky Goodness

  • Classic Chicken Pot Pie – A comforting mix of chicken, vegetables, and a creamy sauce.

  • Chicken Curry Pie – A flavorful take on a traditional favorite.

  • Vegetable Curry Pie – A delicious vegetarian option with bold spices.

  • Pulled Pork Pie – Slow-cooked, tender pork in a rich, savory filling.

  • Cubano Pie – Inspired by the classic Cuban sandwich, featuring layers of meat, cheese, and pickles.

  • Holiday Brie Pie – A seasonal favorite, combining brie and seasonal ingredients for a rich, indulgent flavor.

Beyond pies, Noble Pies also offers scones, cookies, soups, ice cream, and a curated selection of premium coffees and teas.

Overcoming Challenges & Celebrating Success

Running a business is never easy, and Leslie Noble has faced her fair share of challenges.

  • Surviving Two Recessions – The business not only started during a financial crisis but also navigated another economic downturn over a decade later.

  • Adapting During COVID-19 – When the pandemic disrupted business as usual, Noble Pies adjusted, offering curbside pickup, expanding wholesale partnerships, and strengthening their customer relationships through transparency and innovation.

  • Expanding Without Losing Quality – Opening five locations while maintaining the same handmade, small-batch approach is no small feat.

One of Noble Pies’ biggest milestones? Appearing on QVC, which introduced their pies to a national audience and cemented their reputation as one of the premier bakeries in the region.

A Commitment to Community

Noble Pies isn’t just about baking. It’s about giving back.

Leslie and her husband believe that food should bring people together, and they make it a priority to support their local communities through:

  • Free Baking Classes – Hands-on workshops at their bakery and free pie-making sessions at local libraries.

  • Donations – Weekly pie donations to Too Good to Go, food pantries, hospitals, and outpatient facilities.

  • Fundraising Support – Noble Pies regularly donates pies and gift certificates to charity events and fundraisers.

This dedication to community engagement has helped Noble Pies build deep relationships with customers, making them feel like part of the family.
